Black bean burgers!


Ingredients

(6 Servings)
* ½ cup prepared salsa
* 2 15 ounce cans black beans rinsed/dried
* ½ cup breadcrumbs
* ¼ cup red onions grated
* 2 eggs beaten
* 2 tablespoon mustard
* 1 teaspoon ground cumin
* 2 tablespoon olive oil divided

 Instructions

1. Preheat oven to 350°F and line a baking sheet with parchment paper. Spread beans evenly on the baking sheet and bake for 12-15 minutes until slightly dried out, mixing halfway through. Transfer beans to a large bowl and mash with a potato masher.
2. Place salsa in a fine-mesh sieve and stir a few times to drain excess liquid. Transfer the salsa to the bowl with the black beans. Add the breadcrumbs, grated onions, eggs, mustard, and cumin. Place in the fridge for 10 minutes to set.
3. Form the mixture into patties with about 1/3 cup mixture in each. This should make about 6-8 patties.
4. Cook on Stovetop: Heat half the oil in a large nonstick grill pan or skillet over medium heat. Add 4 patties and cook for 4-5 minutes per side until browned.
5. Bake in Oven: Place patties on a lined baking sheet and bake at 375°F for 20 minutes.
6. Serve the burgers on buns with your favorite toppings.

Ingredients 2 tsp chili powder 1 tsp cumin 1 tsp paprika 2 tsp garlic powder 1 tsp onion powder 1 tsp oregano 1 tsp salt 1/2 tsp ground pepper 1/3 cup oil with a high smoke point (I use avocado oil) 1 cauliflower head (4 cups florets) Instructions Mix all spices together with oil (add more oil if needed). Teriyaki Stake Roll-ups!

Ingredients (For 8 roll-ups)⁣⠀ 1 lb flank steak(455 g), or skirt steak⁣⠀ ½ cup soy sauce(120 mL)⁣⠀ 3 cloves garlic, minced⁣⠀ 1 tbsp ginger, grated⁣⠀ 2 tbsp honey⁣⠀ 1 lime, juiced⁣⠀ 1 tsp sriracha sauce, optional⁣⠀ 1 bell pepper, cut into matchsticks⁣⠀ 1 carrot, cut into matchsticks⁣⠀ ½ zucchini, cut into matchsticks⁣⠀ 16 stalks asparagus, halved⁣⠀ 1 red onion, sliced Instructions 1.
